Virtual Cookie Exchange - Graham Cracker Treats


The Results of Last Year's Christmas Cookie Baking
This weekend will be all about Christmas baking at our house.  When I saw Mari's post about a Virtual Cookie Exchange, I thought that I would post the recipe for a family favorite - Graham Cracker Treats.  They are the chocolate-covered wonders pictured in the top right of the photo.  Hope that you enjoy!

Graham Cracker Treats

2 Cups Graham Cracker Crumbs
1 Box Confectioner's Sugar
1/2 Cup Peanut Butter
1 Cup Coconut Flakes
2 Sticks Margarine
1 Cup Chopped Pecans
1 Teaspoon Vanilla
1 6-ounce package Chocolate Chips
1/3 cake of Paraffin Wax

Mix graham cracker crumbs, sugar, peanut butter, coconut, margarine, nuts and vanilla well.  Measure rounded tablespoons of mixture and roll into balls.  Melt chocolate chips and paraffin wax in double boiler.  Dip graham cracker balls in chocolate and lay on wax paper to dry.  Enjoy!

Week in Review: Books, Cooking, Home and Family - June 4, 2011

Where did this week go?  I will be flying out to Houston tomorrow evening and I have a mile-long list of things to do before I go.  The house has to be ready for my sister and family to arrive on Friday!  Here's how my week shaped up...

Books
I finished up The Happiness Project early in the week.  I am still compiling thoughts for my review, but I really enjoyed this book.  It made me reconsider many things and their impact on my happiness or unhappiness.

Outlander to One More Page Books in Arlington, VA for the first time.  I picked up Outlander while I was there and have been reading it in every spare moment.  The writing is beautiful and I love the Scottish Highland setting.  It's a long one, so it will be making the trip to Houston with me next week.J and I ventured

The Soldier's WifeI als received a copy of The Soldiers Wife.  An exerpt from the summary: 
"As World War II draws closer and closer to Guernsey, Vivienne de la Mare knows that there will be sacrifices to be made. Not just for herself, but for her two young daughters and for her mother-in-law, for whom she cares while her husband is away fighting. What she does not expect is that she will fall in love with one of the enigmatic German soldiers who take up residence in the house next door to her home."
Now doesn't that something that I would like to read?

Cooking
We had a barbeque with our neighbors on Memorial Day.  I whipped up our family favorite Potato Casserole - so not healthy, but oh so good:

Potato Casserole
1 package frozen hash browns (thaw for 2 hours)
1/2 Cup melted butter
1/4 tsp salt
1/4 tsp pepper
1/2 Cup chopped onion
1 can cream of chicken soup
1 pint sour cream
2 Cups grated cheese (1 medium and 1 sharp)

Topping:
1 1/2 cups Cornflakes (crushed)
1/4 cup melted butter

Combine potatoes and butter in large bowl.  Add salt, pepper, onion, soup, sour cream and cheese.  Mix well.  Pour in 13 x 9 inch baking pan.  Mix cornflakes and butter in bowl for topping.  Sprinkle on top of potato mixture.  Bake at 300 degrees for 1 hour 45 minutes.

Home
The guest bedrooms are ready!  I ran around the house yesterday between work, an unplanned vet appointment and Tae Kwon Do lessons.  I was able to set up two twin air mattresses for the kids and get the sheets changed out in the guest room for my sister and brother-in-law.  Now we just need some people to fill them!

Family
On Memorial Day we visited Arlington National Cemetery.  While we had been there before, the special changes for Memorial Day were very moving.  Each of the military personnel were in their dress uniforms.  There were survivor families at the entrance distributing fans to visitors and there were roses being given to visitors to lay at grave sites.  And the flags...  Every grave was marked with an American flag.  Beautiful and breathtaking!

My father-in-law's best friend passed away in 2007 and is buried at Arlington.  We visited his grave to pay our respects.  I can't think of a better way to have spent the morning on Memorial Day.

Wednesday was J's first official Tae Kwon Do lesson and yesterday she earned her white belt.  There is a lot of emphasis on respectful behavior, being helpful around the house, schoolwork and reading - I think that this will be great for all of us.  And just like I thought, I LOVE how cute she looks in her uniform!

You might notice the big puffy lip.  This is not Tae Kwon Do related - although that would make a more interesting story.  J had a filling on Thursday and bit her lip really hard while she was still numb.  It blew up like a balloon.  She is not objecting to the supplemental popsicle treatments...

Menu Plan Monday - May 14, 2011


Last week was a very boring and basic dinner week.  My husband and I have been very busy at work, so I sprinkled in breakfast for dinner and quick prep meals for dinner.  We're back on track this week with a few family favorites and a one new experience for me!

Here's what's on our menu for this week:

Sunday:  Roast Chicken, New Potatoes and Corn - this was my very first time roasting an entire chicken and it turned out delicious!!  I kept it simple by brushing it with a little olive oil, sprinkling in some thyme and pouring orange juice into the cavity to keep it interesting.  The flavor was wonderful and I'll be enjoying the leftovers this week for lunch!

Monday:  My Mom's Easy Chili

1 lb. extra lean Ground Beef, crumbled and browned
1 28 oz. can tomato sauce
1 15 oz. can diced tomatoes
1 15 oz. can dark red kidney beans, drained and rinsed
1 TBSP Chili Powder
shredded cheddar or Mexican cheese for topping

Brown ground beef in large pot.  Add tomato sauce, tomatoes, beans and chili powder.  Simmer for 10 minutes and its done!  Sprinkle with a little cheese before eating, if desired.

Tuesday:  Taco Tuesday - a family tradition

Wednesday:  Pizza Night

Thursday:  Pork Chops, rotini pasta and green beans

Friday:  Brushetta Chicken Bake

Saturday:   Date Night - we'll be trying The Capital Grille for the first time!

Savory Saturday: Herb Braised Chicken Thighs


Recently, I signed up to receive daily emails from SavingDinner.com. Every once in a while, Leanne Ely includes a recipe. The following recipe for braised chicken thighs looked like a perfect Sunday dinner, so I tried it last week. The meal was such a hit that a leftover repeat on Monday night was welcomed. (And we don't normally do leftovers!) Even my picky 4 year-old loved the chicken and potatoes. If you try the recipe, let me know what you think!

Herb Braised Chicken Thighs
Serves 6

3 tablespoons flour
3 teaspoons paprika
1 1/2 teaspoon salt
1 1/2 teaspoon dried oregano
1 1/2 teaspoon dried thyme
3/4 teaspoon black pepper
12 skinless chicken thighs
1 1/2 teaspoons olive oil
2 cups (2-inch-thick) sliced carrots
2 large onions, cut into wedges
2 1/4 cups low sodium chicken broth
3/4 cup dry white wine
2 1/4 pounds small red potatoes, quartered

1. Combine first 6 ingredients (flour through pepper) in a large zip-top plastic bag.
2. Add chicken; seal bag, shaking to coat.
3. Heat oil in a Dutch oven or large pot over medium heat.
4. Add chicken and remaining flour mixture to pan; cook 3 minutes on each side or until lightly browned.
5. Add carrot and onion; cook 3 minutes, stirring frequently.
6. Add broth, wine and potatoes; bring to a boil.
7. Reduce heat and simmer for 35 minutes or until chicken is done and vegetables are tender.

Per Serving: 390 calories, 7g Fat, 35g Protein, 43g Carbohydrate, 5g Dietary Fiber, 107mg Cholesterol, 866mg Sodium.
Exchanges: 2 Grain(Starch, 4 Lean Meat, 1 1/2 Vegetable, 1/2 Fat.
Points: 8
